Meticulously hand-harvested from vines averaging 55 years, the grapes undergo a stringent selection process by mid-September. After destemming and crushing, a cold soak maceration of 14 hours at 6°C ensues. Temperature-controlled fermentation takes place in stainless steel containers for 10-15 days, utilizing indigenous yeasts and regular pumping over. Controlled malolactic fermentation occurs in glass-coated cement vats. The maturation process unfolds over 10-12 months in 25 hl French oak casks, followed by at least 6 months in the bottle.
This results in a wine boasting a ruby red to purple hue. Its expressive nose entices with notes of rose blossoms, wild strawberries, raspberries, and hints of undergrowth. On the palate, a dry and refreshing sensation prevails, accompanied by mild tannins and a round, distinct character.
